  • 1 cup Greek yogurt Use plain Greek yogurt for the best texture.
  • 2 large eggs Can substitute with flaxseed meal mixed with water for a vegan option.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the Greek yogurt, eggs, baking powder, and salt. Mix until smooth.
  3. Pour the mixture into the prepared loaf pan.
Baking
  1. Bake for 30–40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  2. Allow to cool before slicing and serving.

Notes

Store leftovers in the fridge for about a week or freeze slices wrapped in foil or in a freezer bag.
