  • 1 pound beef or chicken, cubed
  • 2 cups mixed vegetables (carrots, potatoes, peas, etc.)
  • 4 cups broth (chicken or vegetable)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried herbs (thyme, rosemary, etc.)

Method
 

Cooking Instructions
  1. In a large pot, sauté the onions and garlic until softened.
  2. Add the cubed meat and cook until browned.
  3. Stir in the mixed vegetables and cook for a few minutes.
  4. Pour in the broth and add the herbs, salt, and pepper.
  5. Bring to a boil, then reduce heat and let it simmer for about 30 minutes, until the meat is tender and the veggies are cooked through.
  6. Serve warm and enjoy!

Notes

Store leftovers in the fridge for about 3-4 days or freeze for up to 3 months. Reheat thoroughly before serving. For a thick stew, mash some vegetables against the side of the pot.
