Cookie Base
  • 1 cup unsalted butter, softened Bring to room temperature for easier mixing.
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Mix-Ins
  • 2 cups semi-sweet chocolate chips You can substitute with dark chocolate chips for a richer flavor.
  • 1/2 cup white chocolate chips Optional, can be omitted or swapped for dark chocolate.
  • 1/2 cup crushed peppermint candies For a twist, try crushed Oreos or toffee bits.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until creamy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Fold in the semi-sweet chocolate chips, white chocolate chips, and crushed peppermint.
  7. Drop rounded tablespoons of dough onto a parchment-lined baking sheet.
  8. Bake for 10-12 minutes until the edges are golden.
  9. Allow to cool for a few minutes before transferring to a wire rack.

Notes

Chill the dough for about 30 minutes before baking if you want thicker cookies. For variations, consider adding peppermint extract for extra flavor or using nut butter instead of regular butter.
