  • 1 cup Pomegranate seeds Can be substituted with dried cranberries.
  • 1/2 cup Feta cheese, crumbled Can be replaced with avocado for a creamier version.
  • 1/2 cup Walnuts or pecans, toasted Toast for enhanced flavor.
Dressing Ingredients
  • 2 tablespoons Honey Adjust to taste.
  • 1 tablespoon Dijon mustard Adjust to taste.
  • 3 tablespoons Olive oil
  • to taste Salt and pepper Season to preference.

Preparation
  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, pomegranate seeds, feta cheese, and toasted nuts.
  2. In a small bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper to create the dressing.
  3. Drizzle the dressing over the salad and toss gently to combine.
