  • 2 cups cooked, shredded chicken Rotisserie chicken works well
  • 1 can (15 oz) white beans, drained and rinsed Any white beans can be used
  • 1 can (4 oz) diced green chiles Adjust the amount for spice preference
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream or sour cream Heavy cream for richness, sour cream for tang
  • 1 teaspoon cumin
  • 1 teaspoon chili powder Adjust for spice preference
  • to taste Salt and pepper
  • as needed Olive oil For sautéing

Method
 

Preparation
  1. In a large pot, heat a splash of olive oil over medium heat.
  2. Add chopped onions and garlic; sauté until they turn translucent.
  3. Toss in the shredded chicken, white beans, green chiles, chicken broth, cumin, and chili powder.
  4. Bring the mixture to a simmer and let it cook for 10-15 minutes.
  5. Reduce the heat, then stir in the heavy cream or sour cream.
  6. Season it all with salt and pepper to taste.
  7. Serve hot and enjoy!

Notes

For garnishes, consider topping with fresh cilantro, shredded cheese, or avocado. Serve with crusty bread or tortilla chips.
