  • 4 wraps Tortillas Whole wheat or gluten-free
For the Vegan Apple Crumble Cheesecake
  • 1 cup Cashews Soaked
  • 2 cups Apples Sliced and spiced
  • 1 cup Oats For the crumble topping
  • 1/3 cup Maple syrup For sweetness
For the Vegan Lentil Bolognese
  • 1 cup Lentils Brown or green lentils
  • 1 cup Tomato sauce Canned or homemade
  • 2 cups Vegetable broth For cooking lentils
  • 1 cup Carrots Diced
  • 1 cup Celery Diced
  • 1 cup Onion Chopped

Method
 

Preparation
  1. Prepare the ingredients for each recipe.
  2. Soak cashews for the cheesecake.
  3. Chop vegetables for the wraps and stir fry.
Cooking
  1. Cook lentils in the vegetable broth until tender for the Bolognese.
  2. Sauté onions, carrots, and celery in a pan for the Bolognese sauce.
  3. Bake the apple crumble cheesecake in the oven until golden.
  4. Assemble the Buffalo Tofu Wrap with cooked tofu and vegetables.
Serving
  1. Serve the wraps warm with drizzle of vegan ranch.
  2. Slice and serve the cheesecake chilled.
  3. Serve the Bolognese over your favorite pasta.
