Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the almond flour, all-purpose flour, brown sugar, baking soda, and salt.
- Add the maple syrup, melted coconut oil, and vanilla extract to the dry ingredients. Mix until well combined.
- Fold in the chopped pecans.
- Scoop out tablespoons of dough and place them on a baking sheet lined with parchment paper.
- Bake for about 10-12 minutes or until golden brown. Let cool on a rack.
Notes
Serve warm with non-dairy ice cream or crumble over oats. Store in an airtight container at room temperature for up to one week. For longer storage, refrigerate for up to two weeks or freeze for up to three months.
