  • 2 sheets sheets of puff pastry
  • 30 g caster/granulated sugar
  • 2 heaped teaspoons ground cinnamon or sweet cinnamon
  • 4 large apples Peeled and chopped
  • Dairy-free milk For brushing on pastry
  • Vegan caramel sauce Optional, for drizzling

Method
 

Preparation
  1. Preheat your oven to 200°C (about 400°F).
  2. Peel and chop the apples into small, bite-sized pieces, aiming for about 1cm chunks.
  3. In a bowl, mix the chopped apples with sugar and cinnamon, stirring to combine.
  4. Roll out your puff pastry and cut it into squares.
  5. Spoon some of the apple mixture into the center of each pastry square.
  6. Fold over the corners of the pastry to create parcels, sealing them tightly.
  7. Brush the tops with dairy-free milk for a golden finish.
Baking
  1. Bake in the oven for about 20-25 minutes until golden brown and puffed up.
  2. Remove from the oven and drizzle with caramel sauce if desired.

Notes

For extra flavor, mix sweet and tart apples. You can also add spices like nutmeg or vanilla extract for a twist.
