Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened Let the butter soften fully for smoother dough.
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Filling and Decorations
  • 1/2 cup jam or frosting for filling Feel free to use any type of jam or frosting.
  • as needed sprinkles or decorative icing For adorning the cookies.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream together the butter, granulated sugar, and powdered sugar until fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture and mix until combined.
  6. Roll the dough into small balls and place them on the prepared baking sheets, flattening them slightly.
Baking
  1. Bake for 10-12 minutes, or until set. Allow cookies to cool completely.
Assembly
  1. Once cooled, spread jam or frosting on the flat side of one cookie and sandwich it with another cookie.
  2. Decorate the cookies with sprinkles or icing as desired.

Notes

Store these cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze for up to 3 months. Don’t skip cooling time to keep the icing from melting.
