Method
Baking
- Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla to the dry mix, then mix until well combined.
- Slowly stir in the boiling water until the batter is smooth.
- Pour the batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Frosting
- Beat the softened butter until creamy. Gradually add powdered sugar and heavy cream, mixing until smooth.
- Add vanilla and mix in red food coloring to your liking.
Assembly
- Once the cakes are cool, frost the top of one layer and place the second layer on top. Frost the top and sides of the cake.
- Finish with sprinkles or decorations of your choice.
Notes
Use room temperature ingredients for a fluffier texture. You can substitute vegetable oil with applesauce, or use raspberry/strawberry puree for natural frosting color.
