Cookies
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder (optional) Adds depth of flavor
Ganache
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2-3 teaspoons freeze-dried raspberry powder or pink food coloring For color
  • ½ cup heavy cream
  • ¾ cup dark or white chocolate chips, finely chopped For the ganache
  • 1 tablespoon butter (optional) Adds creaminess to ganache
  • Freeze-dried raspberries (optional for garnish)
  • Chocolate squares (optional for garnish)
  • Heart sprinkles (optional for garnish)
  • Melted white chocolate for drizzling (optional)

Method
 

Preparation
  1. Cream together butter and sugars until fluffy.
  2. Add the egg and vanilla extract, mixing well before stirring in the dry ingredients.
  3. Chill both doughs in the refrigerator for about 30 minutes.
  4. Scoop the dough into balls and press a well in the center of each.
Baking
  1. Bake at 350°F (175°C) for 10–12 minutes.
  2. After baking, re-press the centers while the cookies are still warm. Let them cool completely.
Ganache Preparation
  1. Pour hot cream over the chocolate, stirring until smooth.
  2. Fill the cooled cookie centers with ganache and decorate as desired.
  3. Let the cookies set at room temperature or chill briefly before serving.

Notes

Chill the dough to achieve perfect texture. Use high-quality chocolate for the ganache for an extra luxurious feel. Experiment with flavors such as nuts or caramel.
