Ingredients
  

For the Cookie Dough
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder (optional) Optional for extra flavor.
For the Ganache
  • ½ cup heavy cream
  • ¾ cup dark or white chocolate chips, finely chopped
  • 1 tablespoon butter (optional) Optional for added richness.
Optional Toppings
  • freeze-dried raspberries For decoration.
  • chocolate squares For decoration.
  • heart sprinkles For decoration.
  • melted chocolate white chocolate for drizzling (optional) For decoration.

Method
 

Preparation
  1. Prepare each dough flavor separately.
  2. Cream the butter and sugars together until fluffy.
  3. Add the egg and vanilla; mix well.
  4. Stir in the dry ingredients (flour, cocoa powder, baking soda, and salt).
  5. Chill the dough for 30 minutes — patience pays off!
Baking
  1. Scoop dough into balls and press a well in each.
  2. Bake at 350°F (175°C) for 10–12 minutes.
  3. Re-press the centers after baking and allow cookies to cool completely.
Making the Ganache
  1. Pour hot cream over the chocolate chips and stir until smooth.
  2. Fill the cookie centers with ganache and decorate as desired.
  3. Let set at room temperature or chill briefly before serving.

Notes

Chill your dough to avoid flat cookies. Feel free to experiment with different chocolate types and toppings.
