For the Marinade
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • Salt to taste Salt to taste
For the Sauce
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, pureed
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish Fresh cilantro for garnish
For Serving
  • Naan or Rice Naan or rice for serving

Method
 

Preparation
  1. Marinate chicken pieces in yogurt, garam masala, cumin, coriander, turmeric, chili powder, and salt for at least 30 minutes.
Cooking
  1. In a large skillet, heat butter and oil over medium heat.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in the marinated chicken and cook until no longer pink.
  4. Add pureed tomatoes and simmer for 20 minutes.
  5. Stir in heavy cream and adjust seasoning as needed.
  6. Garnish with fresh cilantro and serve hot with naan or rice.

Notes

Don't rush the marination for deeper flavor! Swap in chicken thighs for juiciness and adjust the spice level with the chili powder. This dish can also be made vegan.
