- Heat the olive oil in a large pot over medium heat.
- Add the onion and cook until it’s soft, about 5 minutes.
- Toss in the garlic and sauté for an additional minute.
- Pour in the broth, then add the potatoes, carrots, and cabbage.
- Season with herbs, salt, and pepper.
- Bring everything to a boil, then reduce heat and let it simmer for 25-30 minutes.
- Taste and adjust seasoning if needed.
- Serve hot, and top with some fresh parsley if desired.
Notes
Leftovers will keep in the fridge for about 3-4 days. Freeze portions for up to 3 months. Consider using fresh herbs or adding protein for variations.
