Ingredients
  

Base Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broth (chicken or vegetable)
  • 2 large potatoes, diced
  • 2 medium carrots, sliced
  • 1 cup cabbage, chopped
  • 1 teaspoon dried herbs (thyme or rosemary)
  • to taste salt and pepper
Optional Toppings
  • to taste fresh parsley For garnish
  • as needed crusty bread For serving

Method
 

Cooking
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and cook until it’s soft, about 5 minutes.
  3. Toss in the garlic and sauté for an additional minute.
  4. Pour in the broth, then add the potatoes, carrots, and cabbage.
  5. Season with herbs, salt, and pepper.
  6. Bring everything to a boil, then reduce heat and let it simmer for 25-30 minutes.
  7. Taste and adjust seasoning if needed.
  8. Serve hot, and top with some fresh parsley if desired.

Notes

Leftovers will keep in the fridge for about 3-4 days. Freeze portions for up to 3 months. Consider using fresh herbs or adding protein for variations.
