Ingredients
  

Cheesecake Layer
  • 3 packages 8 ounce packages cream cheese (softened)
  • 1/2 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1/2 cup heavy whipping cream
  • 2 large eggs
Cake Layer
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon allspice
  • 1/4 cup butter (softened)
  • 1/3 cup brown sugar (packed)
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon pure vanilla extract
  • 1 large egg
  • 1/3 cup milk
  • 1 tablespoon milk
Frosting
  • 12 ounces unsalted butter (softened, 3 sticks)
  • 5 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 3-4 tablespoons heavy whipping cream (cold)
Assembly
  • 1 9-inch store-bought pumpkin pie (premade/store bought)

Method
 

Cheesecake Layer
  1. Preheat your oven to 325°F (160°C).
  2. Beat cream cheese and granulated sugar together until creamy.
  3. Mix in flour, vanilla, cinnamon, eggs, and heavy cream until smooth.
  4. Pour into your greased cake pan and bake for about 45-50 minutes.
Cake Layer
  1. In a bowl, combine all-purpose flour, baking powder, and spices in one bowl.
  2. In another bowl, mix softened butter, brown sugar, vegetable oil, and milk.
  3. Stir in the dry ingredients and combine.
  4. Bake as per your cake recipe instructions until a toothpick comes out clean.
Frosting
  1. In a large mixing bowl, beat softened butter until creamy.
  2. Gradually add powdered sugar, vanilla, and optional cinnamon, beating until combined.
  3. Add cold heavy whipping cream to reach desired consistency.
Assembly and Serving
  1. Before assembling, trim each layer so that they are approximately the same size.
  2. Carefully layer the cheesecake on top of the cake, followed by the pumpkin pie.
  3. Spread frosting on top and around the sides.
  4. Slice into portions to serve, optionally with extra whipped cream or ice cream.

Notes

Make sure to wrap leftovers tightly in plastic wrap or store in an airtight container in the fridge. It'll last for about 3-4 days. Chill your cheesecake to make cutting easier and feel free to experiment with flavors like adding nuts or using a different pie.
