Preparation
- In a mixing bowl, combine coconut milk, lime juice, soy sauce, brown sugar, garlic powder, ginger, and red curry paste. Add a pinch of salt and pepper.
- Add the chicken pieces to the marinade, cover, and refrigerate for at least 30 minutes.
Cooking
- Preheat the grill or oven to 400°F (200°C).
- If using skewers, thread the marinated chicken onto them.
- Grill or bake the chicken bites for 15-20 minutes, turning halfway, until cooked through and golden brown.
- Serve warm as an appetizer or snack.
Notes
For added spice, feel free to add sriracha to the marinade. For a slightly crispier outside, broil the chicken bites for the last couple of minutes. A vegan version can be made using tofu or vegetables. You can also toss in bell peppers and zucchini for extra veggie color.
