Ingredients
  

For the marinade
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup coconut milk
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, minced
  • 1 teaspoon red curry paste
  • to taste Salt and pepper
For cooking
  • Skewers if grilling Soak wooden skewers in water for 30 minutes to prevent burning.

Preparation
  1. In a mixing bowl, combine coconut milk, lime juice, soy sauce, brown sugar, garlic powder, ginger, and red curry paste. Add a pinch of salt and pepper.
  2. Add the chicken pieces to the marinade, cover, and refrigerate for at least 30 minutes.
Cooking
  1. Preheat the grill or oven to 400°F (200°C).
  2. If using skewers, thread the marinated chicken onto them.
  3. Grill or bake the chicken bites for 15-20 minutes, turning halfway, until cooked through and golden brown.
  4. Serve warm as an appetizer or snack.

Notes

For added spice, feel free to add sriracha to the marinade. For a slightly crispier outside, broil the chicken bites for the last couple of minutes. A vegan version can be made using tofu or vegetables. You can also toss in bell peppers and zucchini for extra veggie color.
