Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic; sauté until softened, about 5 minutes.
  3. Stir in the cumin and cook for an additional minute.
  4. Pour in the broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Stir in the lime juice and season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro.

Notes

This soup keeps well in the fridge for up to 4 days. For longer storage, freeze for about 3 months. Reheat on the stove or in the microwave until steaming hot.
