  • 1 cup rice Cook according to package instructions.
  • 1 lb ground beef or chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 each avocado, diced
  • 1 cup shredded cheese
Optional Toppings
  • 1 cup sour cream Optional
  • 1 cup chopped cilantro Optional

Method
 

Preparation
  1. Cook the rice according to package instructions.
Cooking
  1. In a skillet, brown the ground beef or chicken over medium heat until fully cooked. Drain excess fat.
  2. Add the taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir and let simmer for about 5-10 minutes.
Assembly
  1. In a bowl, layer the cooked rice, meat mixture, avocado, cheese, and any other desired toppings such as sour cream and cilantro.
  2. Serve warm and enjoy!

Notes

For a plant-based version, substitute meat with tofu or tempeh. Try adding tortilla strips for extra crunch and jalapeƱos for heat. For a variation, use lime-infused quinoa instead of rice.
