Ingredients
  

Wet Ingredients
  • 1 cup mashed sweet potatoes
  • 1 cup almond milk (or any plant-based milk)
  • 2 tablespoons maple syrup (optional) Enhances sweetness
  • cooking oil for the waffle iron Use generously for crispy edges
Dry Ingredients
  • 1 cup oat flour Can substitute with other flour types
  • 1 tablespoon baking powder
  • 1 tablespoon ground flaxseed Can be replaced with chia seeds or omitted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat the waffle iron.
  2. In a large bowl, combine mashed sweet potatoes, almond milk, and maple syrup.
  3. In another bowl, mix oat flour, baking powder, ground flaxseed, cinnamon, and salt.
  4. Gradually combine the dry ingredients with the wet mixture until smooth.
Cooking
  1. Lightly oil the waffle iron and pour batter to fill.
  2. Cook according to the waffle maker instructions until golden and crispy.
  3. Serve warm with toppings of your choice.

Notes

For added flavor, consider adding a pinch of nutmeg. Can use pumpkin spice instead of cinnamon for a fall twist, or add chocolate chips for a sweeter breakfast.
