  • 2 pounds boneless, skinless chicken thighs
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can pineapple chunks, drained
  • 1/4 cup green onions, sliced (for garnish)

Method
 

Preparation
  1. In a bowl, mix together the pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger.
  2. Place the chicken thighs in the crock pot and pour the pineapple juice mixture over them.
  3. Add the pineapple chunks to the pot.
  4. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  5. Shred the chicken in the sauce and serve hot, garnished with green onions.

Notes

Adjust sweetness by reducing brown sugar if desired. You can spice it up with red pepper flakes. Leftovers are great for sandwiches or salads.
