Method
 

Preparation
  1. Cook the rice according to package instructions.
  2. In a skillet, heat olive oil over medium heat.
  3. Season the chicken thighs with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side.
Cooking
  1. Pour the sweet chili sauce and soy sauce over the chicken, and let it simmer for a few minutes until the sauce thickens slightly.
  2. Serve the chicken over the cooked rice and drizzle with extra sauce if desired.
Garnishing
  1. Garnish with chopped green onions and enjoy!

Notes

You can substitute chicken with tofu for a vegan option. Use brown rice for added fiber.
