- Cook the jasmine rice according to package instructions.
- In a skillet, cook the chicken breasts over medium heat until golden brown and fully cooked through.
- Once cooked, pour sweet chili sauce over the chicken and allow it to coat the chicken, cooking for an additional 2-3 minutes.
- While the chicken is cooking, steam or sauté the mixed vegetables until tender.
- In a small bowl, mix coconut milk and lime juice to create the drizzle.
- To serve, place a portion of rice in a bowl, top with glazed chicken, vegetables, and drizzle with the coconut lime sauce.
- Garnish with fresh cilantro.
Notes
Feel free to adjust the veggie combo based on what you have on hand. Leftover broccoli can be added. This bowl is perfect for meal prep as components can be stored separately.
