Swedish Meatball Noodle Bake

Ingredients
  

For the Meatballs
  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
For the Bake
  • 1 lb egg noodles
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, onion, garlic, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter.
Cooking
  1. Cook the meatballs in a large skillet over medium heat until browned on all sides.
  2. In a separate pot, cook egg noodles according to package instructions; drain and set aside.
  3. In a saucepan, combine beef broth, heavy cream, soy sauce, and Worcestershire sauce. Cook until slightly thickened.
  4. In a large baking dish, combine the cooked meatballs, egg noodles, and sauce. Mix well to combine.
  5. Bake for 25-30 minutes, or until bubbly and golden. Let it cool slightly before serving.

Notes

Store leftovers in the fridge for about 3-4 days, or freeze for up to 3 months. Reheat in the oven or microwave until heated through.
