  • 1 lb chicken thighs or breasts, cut into chunks Use whichever is on sale.
  • Salt and pepper Salt and pepper to taste
For the Sauce
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce Use gluten-free soy sauce for a gluten-free version.
  • 1 tablespoon honey
  • 2 cloves garlic, minced Toasted for extra flavor.
  • 1 teaspoon grated ginger
Cooking Essentials
  • 1 tablespoon vegetable oil

Preparation
  1. In a bowl, mix together the sweet chili sauce, soy sauce, honey, garlic, and ginger.
Cooking

  3. Pour the sauce mixture over the chicken, stirring to coat.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze for up to 3 months. To reheat, add a splash of water to prevent drying out.
