- Preheat your oven to 375°F (190°C).
- In a skillet, heat a drizzle of olive oil and sauté the garlic until it’s aromatic.
- Add spinach and cook until wilted, then let it cool down.
- Stir in cream cheese and mozzarella cheese until the mixture is creamy.
- Make a pocket in each chicken breast and season with salt and pepper.
- Stuff each breast with the spinach mixture and secure with toothpicks.
- Place the stuffed chicken in a baking dish, drizzle with more olive oil, and bake for 25-30 minutes until cooked through.
Notes
Serve with roasted veggies or fluffy rice for a delicious meal. Storage: Leftovers keep well in the fridge for 3-4 days. Refrigerate stuffed chicken a day ahead for meal prep. To freeze, wrap tightly and store for up to three months before baking.
