  • 2 cups fresh spinach
  • ½ cup cream cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat a drizzle of olive oil and sauté the garlic until it’s aromatic.
  3. Add spinach and cook until wilted, then let it cool down.
  4. Stir in cream cheese and mozzarella cheese until the mixture is creamy.
  5. Make a pocket in each chicken breast and season with salt and pepper.
  6. Stuff each breast with the spinach mixture and secure with toothpicks.
  7. Place the stuffed chicken in a baking dish, drizzle with more olive oil, and bake for 25-30 minutes until cooked through.

Notes

Serve with roasted veggies or fluffy rice for a delicious meal. Storage: Leftovers keep well in the fridge for 3-4 days. Refrigerate stuffed chicken a day ahead for meal prep. To freeze, wrap tightly and store for up to three months before baking.
