Ingredients
  

For the pastry
  • 1 sheet puff pastry Thawed if frozen
  • 1 cup fresh spinach, chopped Can use frozen spinach, thawed and drained
  • 1/2 cup feta cheese, crumbled Can swap for goat cheese or mozzarella
  • 1 large egg, beaten For egg wash
  • to taste Salt and pepper Use according to preference
  • to taste Olive oil Optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface.
  3. Cut the pastry into strips about 1 inch wide.
  4. In a bowl, combine the chopped spinach, feta, salt, and pepper.
  5. Place a spoonful of the spinach and feta mixture at one end of each pastry strip.
  6. Fold the pastry over the filling and twist to seal.
  7. Place the twists on a baking sheet lined with parchment paper.
  8. Brush the tops with beaten egg.
  9. Bake for 15-20 minutes or until golden brown.
  10. Serve warm and enjoy!

Notes

These can be stored in the fridge for 3-4 days in an airtight container. For longer storage, freeze them for 1-2 months.
