  • 2 pieces chicken breasts boneless and skinless
  • 3-4 pieces jalapenos, chopped remove seeds for less heat
  • 1 cup heavy cream or substitute with half-and-half for a lighter option
  • 1 cup chicken broth for added flavor
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Rice or preferred side for serving

Method
 

Preparation
  1. In a skillet, heat olive oil over medium heat.
  2. Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
  3. Add the chicken to the skillet and cook until it’s browned and cooked through, about 6-8 minutes per side.
  4. Remove the chicken and set aside.
  5. In the same skillet, toss in the chopped jalapenos and sauté until softened.
  6. Pour in the chicken broth and heavy cream, stirring to combine.
  7. Bring everything to a simmer and let the sauce thicken slightly.
  8. Return the chicken to the skillet and coat it well with the sauce.
  9. Serve over rice or with your favorite side.

Notes

Leftovers can be stored in an airtight container for about 3-4 days in the fridge, or frozen for up to 3 months. Reheat when ready to serve.
