  • 4 large tortillas
  • 1 cup lettuce, shredded
  • 1/2 cup blue cheese or ranch dressing
  • 1 cup diced tomatoes
  • 1/4 cup sliced green onions

Method
 

Preparation
  1. In a bowl, mix the shredded chicken with the buffalo sauce until well coated.
  2. Lay out the tortillas on a flat surface.
  3. Spread a layer of blue cheese or ranch dressing on each tortilla.
  4. Add shredded lettuce, diced tomatoes, and the buffalo chicken mixture on top.
  5. Sprinkle green onions over the filling.
  6. Roll the tortillas tightly to enclose the filling.
  7. Slice in half and serve immediately.

Notes

Use rotisserie chicken for even faster prep! These wraps can be stored in an airtight container in the fridge for up to 3 days or frozen for about a month. For a vegan version, substitute chicken with chickpeas or tofu.
