Ingredients
  

Cinnamon-sugar mixture
  • 4 tablespoons unsalted butter, softened Ensure it's at room temperature.
  • cup packed brown sugar
  • tablespoons all-purpose flour
  • teaspoons ground cinnamon
  • A pinch of salt
Cookie dough
  • 1 cup unsalted butter, softened but cool Important to keep cool for the right texture.
  • 1⅓ cups granulated sugar
  • teaspoons pure vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • cups all-purpose flour Sifted for better texture.
  • ¾ teaspoon baking powder
  • 1 teaspoon cornstarch
  • ¼ teaspoon salt

Method
 

Preparation
  1. In a mixing bowl, beat together 4 tablespoons of softened unsalted butter, ⅓ cup of packed brown sugar, 1½ tablespoons of all-purpose flour, 2½ teaspoons of ground cinnamon, and a pinch of salt until creamy.
  2. In another bowl, combine 1 cup of unsalted butter (softened but cool) and 1⅓ cups of granulated sugar. Mix until smooth.
  3. Add in 1¾ teaspoons of pure vanilla extract, 1 large egg, and 1 large egg yolk. Blend them into the mixture.
  4. Gradually mix in 2¾ cups of all-purpose flour, ¾ teaspoon of baking powder, 1 teaspoon of cornstarch, and ¼ teaspoon of salt.
  5. Gently fold in your cinnamon-sugar mixture from step one into the dough.
  6. Chill the dough for 30 minutes, then scoop and roll into balls.
  7. Bake at 350°F (175°C) for 10-12 minutes until the edges are just golden.

Notes

To keep the cookies fresh, store them in an airtight container at room temperature. They can also be frozen for longer storage.
