Preparation
- In a mixing bowl, beat together 4 tablespoons of softened unsalted butter, ⅓ cup of packed brown sugar, 1½ tablespoons of all-purpose flour, 2½ teaspoons of ground cinnamon, and a pinch of salt until creamy.
- In another bowl, combine 1 cup of unsalted butter (softened but cool) and 1⅓ cups of granulated sugar. Mix until smooth.
- Add in 1¾ teaspoons of pure vanilla extract, 1 large egg, and 1 large egg yolk. Blend them into the mixture.
- Gradually mix in 2¾ cups of all-purpose flour, ¾ teaspoon of baking powder, 1 teaspoon of cornstarch, and ¼ teaspoon of salt.
- Gently fold in your cinnamon-sugar mixture from step one into the dough.
- Chill the dough for 30 minutes, then scoop and roll into balls.
- Bake at 350°F (175°C) for 10-12 minutes until the edges are just golden.
Notes
To keep the cookies fresh, store them in an airtight container at room temperature. They can also be frozen for longer storage.
