Ingredients
  

Dry Ingredients
  • 2 3/4 cups all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp salt
Wet Ingredients
  • 3/4 cup unsalted butter, room temperature
  • 1 1/2 cups sugar, plus 3 tbsp for rolling
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
Cinnamon Sugar Coating
  • 1 tbsp ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 400°F. Prepare a cookie sheet with a silicone baking mat or parchment paper.
  2. In a medium bowl, combine the flour, cream of tartar, baking soda, and salt. Set aside.
  3. In a large mixer bowl, add the butter and 1 1/2 cups of sugar. Cream until light in color and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, mixing until well combined. Scrape down the sides of the bowl as needed.
  5. Mix in the vanilla extract until incorporated.
  6. Gradually add the dry ingredients to the wet mixture and mix until combined.
  7. In a small bowl, combine the remaining 3 tablespoons of sugar with the cinnamon.
  8. Create balls of one tablespoon of cookie dough each.
  9. Roll each ball in the cinnamon sugar mixture, then set on the prepared cookie sheet with about 2 inches between them.
Baking
  1. Bake for 6-8 minutes.
  2. Remove cookies from the oven and allow to sit for 2-3 minutes, then move to a cooling rack.

Notes

Store cookies in an airtight container for 5-7 days at room temperature or freeze them for up to 3 months.
