  • 1 cup sweet chili sauce
  • 1/2 cup soy sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 pieces bell pepper, sliced
  • 1 pieces onion, sliced
  • Salt and pepper to taste
For serving
  • Cooked rice or noodles for serving

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix together the sweet chili sauce, soy sauce, garlic, and ginger. Pour the sauce over the chicken.
  3. Add the sliced bell pepper and onion to the slow cooker.
  4. Season with salt and pepper to taste.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender.
Serving
  1. Serve the chicken over cooked rice or noodles, drizzling some of the sauce from the slow cooker over the top.

Notes

Got leftovers? Store in an airtight container for 3-4 days or freeze for up to 3 months. For a vegetarian version, substitute chicken with tofu or chickpeas.
