Preparation
- Place the chicken breasts in the slow cooker.
- In a bowl, mix together the sweet chili sauce, soy sauce, garlic, and ginger. Pour the sauce over the chicken.
- Add the sliced bell pepper and onion to the slow cooker.
- Season with salt and pepper to taste.
Cooking
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender.
Serving
- Serve the chicken over cooked rice or noodles, drizzling some of the sauce from the slow cooker over the top.
Notes
Got leftovers? Store in an airtight container for 3-4 days or freeze for up to 3 months. For a vegetarian version, substitute chicken with tofu or chickpeas.
