Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 2 pieces lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced) Toasted garlic enhances flavor.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
For Serving
  • 2 cups cooked rice For serving.
  • Fresh parsley For garnish.

Method
 

Preparation
  1. In a slow cooker, combine chicken broth, lemon juice, lemon zest, olive oil, garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken breasts and coat them well with the mixture.
Cooking
  1. Cover and cook on low for 4-6 hours, or until chicken is tender and fully cooked.
Serving
  1. Serve the chicken over fluffy rice and garnish with fresh parsley.

Notes

This dish can be stored in the fridge for up to 3-4 days or frozen for up to 3 months. To reheat, use a microwave or warm on the stove with a splash of chicken broth if needed.
