Ingredients
  

For the Marinade
  • 1/4 cup lemon juice Freshly squeezed is best.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Toasting enhances flavor.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
For the Dish
  • 4 pieces chicken breasts
  • 2 cups chicken broth
  • 1 cup long-grain rice Adjust for brown rice cooking time.
  • Fresh herbs for garnish (optional)

Method
 

Preparation
  1. In a slow cooker, combine lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken breasts to the slow cooker and coat them with the marinade.
  3. Pour chicken broth over the chicken.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  2. About 30 minutes before serving, stir in the rice.
  3. Once the rice is cooked, fluff with a fork and serve. Garnish with fresh herbs if desired.

Notes

Store leftovers in the fridge for 3-4 days or freeze for up to 3 months. To reheat, use the microwave or stovetop.
