Preparation
- In a slow cooker, combine lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper.
- Add the chicken breasts to the slow cooker and coat them with the marinade.
- Pour chicken broth over the chicken.
Cooking
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the rice.
- Once the rice is cooked, fluff with a fork and serve. Garnish with fresh herbs if desired.
Notes
Store leftovers in the fridge for 3-4 days or freeze for up to 3 months. To reheat, use the microwave or stovetop.
