  • 2 tablespoons jerk seasoning
  • 1 tablespoon allspice
  • 1 teaspoon dried thyme
  • 2 cloves garlic, minced
  • 1 piece onion, chopped
  • 1 piece bell pepper, chopped
  • 1 cup chicken broth
  • 1 tablespoon brown sugar
  • Salt and pepper to taste

Method
 

Preparation
  1. In a bowl, mix together jerk seasoning, allspice, thyme, garlic, onion, bell pepper, and brown sugar.
  2. Rub the mixture all over the chicken thighs.
  3. Place the seasoned chicken in the slow cooker and pour in the chicken broth.
  4. Season with salt and pepper to taste.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender.
Serving
  1. Serve it up over rice and peas and enjoy!

Notes

Marinate ahead for more flavor, adjust spice levels to preference, and consider using boneless chicken for easier serving. Leftovers keep in the fridge for 3 days or can be frozen for up to 3 months.
