  • 1 block Brie cheese
  • 1 cup Pistachios, chopped Finely chopped for better texture
  • 1 tablespoon Fresh rosemary, chopped Freshly chopped for flavor
  • 2 sheets Puff pastry sheets Thawed
  • 1 large Egg, beaten For egg wash
  • to taste Honey Optional, for drizzling

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and cut it into squares big enough to wrap the Brie.
  3. Place a small piece of Brie cheese in the center of each square.
  4. In a bowl, mix the chopped pistachios and rosemary. Spoon this mixture over the Brie.
  5. Fold the pastry over the cheese and pinch to seal it up tight.
  6. Brush the tops with beaten egg for that shiny finish.
  7. Bake for 15-20 minutes or until golden brown.
  8. Allow to cool slightly, then drizzle with honey if desired before serving.

Notes

These bites can be stored in an airtight container in the fridge for 3-4 days. They can also be frozen before baking and cooked straight from the freezer for about 20-25 minutes.
