Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set this aside.
  3. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fold in the caramel chips and the chocolate chips, if using.
  7. Scoop the dough onto your prepared baking sheets, spacing them about 2 inches apart.
  8. Sprinkle each cookie with flaky sea salt before baking.
Baking
  1. Bake for 10-12 minutes, or until the edges are golden brown. The centers will look soft.
  2. Let them cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

Serve warm with vanilla ice cream or stack on a plate for a cozy coffee chat. For storing, keep in an airtight container at room temperature for about a week.
