Preparation
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice the sweet potatoes into ½-inch thick rounds.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated.
- Arrange the sweet potato slices in a single layer on the prepared baking sheet.
Cooking
- Roast in the preheated oven for 25-30 minutes, turning halfway through, until tender and golden brown.
- Remove from the oven and allow to cool slightly.
Serving
- Arrange the roasted sweet potato rounds on a serving platter.
- Sprinkle crumbled feta cheese over the top of the sweet potatoes.
- Drizzle with honey and garnish with freshly chopped parsley.
- Serve warm or at room temperature.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a toaster oven or regular oven. For vegan options, skip the feta and use maple syrup instead of honey.
