Sweet Potato Rounds
  • 2 large sweet potatoes, washed and scrubbed Aim for even-sized slices for consistent cooking.
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika Adds an irresistible depth of flavor.
Toppings
  • ¾ cup crumbled feta cheese Can substitute with goat cheese for a tangy flavor.
  • ¼ cup honey Maple syrup can be used as a sweet alternative.
  • 2 tablespoons chopped fresh parsley For garnish.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes into ½-inch thick rounds.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated.
  4. Arrange the sweet potato slices in a single layer on the prepared baking sheet.
Cooking
  1. Roast in the preheated oven for 25-30 minutes, turning halfway through, until tender and golden brown.
  2. Remove from the oven and allow to cool slightly.
Serving
  1. Arrange the roasted sweet potato rounds on a serving platter.
  2. Sprinkle crumbled feta cheese over the top of the sweet potatoes.
  3. Drizzle with honey and garnish with freshly chopped parsley.
  4. Serve warm or at room temperature.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a toaster oven or regular oven. For vegan options, skip the feta and use maple syrup instead of honey.
