  • 2 medium summer squash (zucchini and/or yellow squash)
  • 2 tablespoons olive oil Essential for crispy finish
  • to taste Salt Add as per preference
  • to taste Pepper Add as per preference
  • 1/2 cup grated Parmesan cheese Can be substituted for nutritional yeast for vegan option
  • as needed Fresh herbs (such as basil or thyme) For garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the summer squash into 1/4-inch thick rounds.
  3. In a large bowl, toss the squash with olive oil, salt, and pepper until evenly coated.
  4. Arrange the squash on a baking sheet in a single layer.
Cooking
  1. Roast in the preheated oven for 15-20 minutes until tender and slightly golden.
  2. Remove from the oven and sprinkle with grated Parmesan cheese.
  3. Return to the oven for an additional 5 minutes until the cheese is melted.
  4. Serve warm, garnished with fresh herbs.

Notes

Keep those slices uniform for even cooking. You can prep ahead of time by slicing and tossing the squash with oil and seasoning.
