Preparation
- Preheat your oven to 400°F (200°C).
- Slice the summer squash into 1/4-inch thick rounds.
- In a large bowl, toss the squash with olive oil, salt, and pepper until evenly coated.
- Arrange the squash on a baking sheet in a single layer.
Cooking
- Roast in the preheated oven for 15-20 minutes until tender and slightly golden.
- Remove from the oven and sprinkle with grated Parmesan cheese.
- Return to the oven for an additional 5 minutes until the cheese is melted.
- Serve warm, garnished with fresh herbs.
Notes
Keep those slices uniform for even cooking. You can prep ahead of time by slicing and tossing the squash with oil and seasoning.
