  • 4 medium Russet potatoes Sliced into thin rounds
  • 1 clove Garlic Minced
  • 1 cup Parmesan cheese Grated
  • 1/4 cup Fresh herbs Such as rosemary or thyme
  • 2 tablespoons Olive oil For tossing with potatoes
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice the Russet potatoes into thin rounds.
  3. In a bowl, mix the sliced potatoes with minced garlic, olive oil, salt, and pepper.
  4. Layer the potato slices in a stack, sprinkling Parmesan cheese and fresh herbs between layers.
Baking
  1. Place the stacks on a baking sheet and bake for 25-30 minutes until golden and crispy.
  2. Serve hot as an appetizer or side dish.

Notes

For best results, keep potato slices even for uniform cooking. You can prep the potato slices a day in advance. These stacks can be made vegan by using nutritional yeast instead of Parmesan.
