Cake Ingredients
  • 1 box red velvet cake mix Choose your favorite brand
  • 3 large eggs
  • 1 cup water As per cake mix instructions
  • 1/2 cup vegetable oil As per cake mix instructions
  • 1 cup cream cheese frosting Store-bought or homemade
Coating and Decoration
  • 1 package melting chocolate or candy melts For coating
  • to taste sprinkles For decoration

Method
 

Baking the Cake
  1. Preheat the oven as per the cake mix directions.
  2. Prepare the cake batter and bake it in a 9x13 pan.
  3. Let the cake cool completely.
Preparing the Cake Pops
  1. Crumble the cooled cake into a large bowl until fine.
  2. Add the cream cheese frosting to the crumbled cake and mix until combined.
  3. Roll the mixture into small balls, about an inch in diameter, and place on a parchment-lined baking sheet.
  4. Chill the baking sheet in the fridge for about 30 minutes.
Dipping and Decorating
  1. Melt the chocolate or candy melts.
  2. Dip the end of each lollipop stick into the melted chocolate, then insert into the cake pops.
  3. Dip the entire cake pop into the melted chocolate, allowing the excess to drip off.
  4. Sprinkle on desired toppings while the chocolate is still wet.
  5. Place the pops back on parchment and let them harden completely.

Notes

Store in an airtight container in the fridge for up to a week or freeze for later use. Allow to thaw in the fridge before serving.
