Preparation
- In a mixing bowl, whisk together flour, eggs, milk, sugar, and vanilla until smooth.
- Let the batter rest for 10 minutes if possible for tender crepes.
Cooking the crepes
- Heat a non-stick skillet over medium heat and add a little butter.
- Pour a ladle of batter into the skillet, swirling to cover the bottom evenly.
- Cook for 1-2 minutes until the edges lift and the bottom is lightly browned.
- Flip and cook for another minute.
- Repeat with remaining batter.
Preparing the filling
- In another skillet, sauté the sliced apples in butter and sprinkle with cinnamon until tender.
Serving
- Serve the crepes filled with the apple mixture and drizzle with maple syrup or dust with powdered sugar.
Notes
These crepes can be stored in the fridge for 2-3 days. Layer with parchment paper to prevent sticking. Reheat in a skillet or microwave.
