  • 1 cup all-purpose flour Sifted for best results
  • 2 large eggs
  • 1.5 cups milk Whole milk recommended
  • 1 tablespoon sugar For sweetness
  • 1 teaspoon vanilla extract Enhances flavor
  • 1 tablespoon butter For frying the crepes
For the filling
  • 2 apples, peeled and sliced Any variety you prefer
  • Cinnamon to taste Adds warmth and flavor
For serving
  • Maple syrup or powdered sugar Optional toppings

Method
 

Preparation
  1. In a mixing bowl, whisk together flour, eggs, milk, sugar, and vanilla until smooth.
  2. Let the batter rest for 10 minutes if possible for tender crepes.
Cooking the crepes
  1. Heat a non-stick skillet over medium heat and add a little butter.
  2. Pour a ladle of batter into the skillet, swirling to cover the bottom evenly.
  3. Cook for 1-2 minutes until the edges lift and the bottom is lightly browned.
  4. Flip and cook for another minute.
  5. Repeat with remaining batter.
Preparing the filling
  1. In another skillet, sauté the sliced apples in butter and sprinkle with cinnamon until tender.
Serving
  1. Serve the crepes filled with the apple mixture and drizzle with maple syrup or dust with powdered sugar.

Notes

These crepes can be stored in the fridge for 2-3 days. Layer with parchment paper to prevent sticking. Reheat in a skillet or microwave.
