Ingredients
  

For the Dough
  • 3 cups all-purpose flour
  • 1 packet instant yeast (2 ¼ tsp)
  • ½ cup warm milk
  • ½ cup canned pumpkin puree
  • ¼ cup sugar
  • ¼ cup butter, melted
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
For the Filling
  • ½ cup brown sugar
  • 1 tbsp ground cinnamon
For the Frosting
  • 1 package (8 oz) cream cheese, softened
  • ½ cup powdered sugar
  • 1 tbsp milk

Method
 

Preparation
  1. In a large bowl, combine flour, yeast, sugar, salt, and spices.
  2. In a separate bowl, mix warm milk, pumpkin puree, melted butter, and vanilla.
  3. Combine the wet and dry ingredients to form dough.
Kneading
  1. Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth.
Rising
  1. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for 1 hour, or until doubled in size.
Rolling
  1. Once it’s risen, roll the dough into a rectangle, about 1/4-inch thick.
  2. Mix brown sugar and cinnamon, then sprinkle it over the dough.
  3. Roll it up tightly and pinch the seams to seal.
  4. Cut the roll into slices (about 1 inch each).
  5. To make them pumpkin-shaped, flatten each roll slightly and use some kitchen scissors to cut slits at the top for the pumpkin 'ribs.'
Baking
  1. Place the shaped rolls on a baking sheet lined with parchment paper.
  2. Let them rise again for about 30 minutes.
  3. Preheat your oven to 350°F (175°C), then bake for 20-25 minutes or until golden brown.
Frosting
  1. Beat together cream cheese, powdered sugar, and milk until smooth.
  2. Once the rolls are cool, drizzle the cream cheese frosting on top.

Notes
