  • 1 cup brown sugar
  • 1/2 cup maple syrup
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour Can be substituted with gluten-free flour.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin spice Essential for that cozy fall flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a mixing bowl, combine pumpkin puree, brown sugar, maple syrup, and melted butter. Mix well until smooth.
  3. Add in the eggs and vanilla extract, stirring until fully incorporated.
  4. In another bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin spice.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid over-mixing.
  6. Pour the batter into the prepared pan and spread evenly.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let cool before cutting into bars.

Notes

Store in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week. Freezing is possible for up to a month.
