Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/2 cup butter (melted)
  • 1/4 cup sugar (optional for crust) Add if you prefer a sweeter crust.
For the filling
  • 1 can (15 oz) pumpkin puree
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup milk
  • 1 teaspoon pumpkin spice
  • 1 cup whipped topping Be generous for a fluffy layer.

Method
 

Preparation
  1. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar (if using). Press this mixture into the bottom of a 9×13 inch dish to form the crust.
  2. In another bowl, whisk together pumpkin puree, pudding mix, milk, and pumpkin spice until smooth.
  3. Pour the pumpkin mixture over the crust.
  4. Spread the whipped topping over the pumpkin layer.
  5. Chill in the refrigerator for at least 2 hours before serving.

Notes

For serving, cut into squares and serve chilled. Drizzle with caramel sauce or sprinkle cinnamon on top for an extra touch. For storage, keep it tightly covered in the fridge for about 3-4 days. This dessert can be made ahead and tastes better after chilling overnight.
