Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat the pumpkin puree, sugar, brown sugar, butter, vanilla, and egg until smooth.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Drop spoonfuls of batter onto a lined baking sheet.
Baking
- Bake for 12-15 minutes or until edges are set.
- Allow cookies to cool and decorate with icing or toppings as desired.
Notes
Serve warm with cream cheese frosting or whipped cream. Store in an airtight container for up to a week at room temperature, or freeze for up to three months.
