  • 1 pack Dumplings (potstickers) Use frozen or fresh potstickers.
  • 4 cups chicken or vegetable broth For a vegan option, use vegetable broth.
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, minced
  • 2 cups bok choy or spinach, chopped You can swap for other greens.
  • 1 medium carrot, sliced
  • to taste soy sauce Adjust according to preference.
  • to taste sesame oil Drizzle for extra flavor.
  • as needed green onions, for garnish Sliced for serving.

Method
 

Preparation
  1. In a large pot, heat a little oil over medium heat and add minced garlic and ginger, sautéing until fragrant.
  2. Pour in the broth and bring it to a boil.
  3. Add the sliced carrots and cook for a few minutes until tender.
Cooking
  1. Gently add the dumplings and simmer according to package instructions until they are cooked through.
  2. Stir in the chopped greens and let them wilt.
Finishing Touches
  1. Season with soy sauce to taste and drizzle with sesame oil.
  2. Serve hot, garnished with sliced green onions.

Notes

Store leftovers in the fridge for up to 3 days. For best quality, keep broth and dumplings separate if making in advance.
