Preparation
- Preheat the oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan.
- In a large mixing bowl, combine the yellow cake mix, crushed pineapple (with juice), eggs, and vegetable oil. Mix until well combined.
- Fold in the shredded coconut and chopped nuts, if desired.
- Pour the batter into the prepared baking pan and smooth the top.
Baking
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Frosting
- While the cake is baking, prepare the frosting by mixing together the powdered sugar, softened butter, milk, and vanilla extract until smooth.
- Once the cake has cooled, spread the frosting over the top.
- Slice and enjoy your Pineapple Heaven Cake!
Notes
For an added twist, serve with a scoop of vanilla ice cream and sprinkle toasted coconut on top. Leftovers keep well in the fridge for about 5 days, or can be frozen for future enjoyment.
