Ingredients
  

For the Cake
  • 1 box yellow cake mix Standard size box
  • 1 can crushed pineapple (with juice) Do not drain
  • 3 pieces eggs Room temperature preferred
  • 1/2 cup vegetable oil
  • 1 cup shredded coconut (optional) For added texture
  • 1 cup chopped walnuts or pecans (optional) Can substitute with other nuts
For the Frosting
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter (softened) Ensure it's softened for easy mixing
  • 1-2 tablespoons milk Adjust for desired consistency
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan.
  2. In a large mixing bowl, combine the yellow cake mix, crushed pineapple (with juice), eggs, and vegetable oil. Mix until well combined.
  3. Fold in the shredded coconut and chopped nuts, if desired.
  4. Pour the batter into the prepared baking pan and smooth the top.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Frosting
  1. While the cake is baking, prepare the frosting by mixing together the powdered sugar, softened butter, milk, and vanilla extract until smooth.
  2. Once the cake has cooled, spread the frosting over the top.
  3. Slice and enjoy your Pineapple Heaven Cake!

Notes

For an added twist, serve with a scoop of vanilla ice cream and sprinkle toasted coconut on top. Leftovers keep well in the fridge for about 5 days, or can be frozen for future enjoyment.
