- In a large bowl, combine the diced chicken, pineapple chunks, red bell pepper, red onion, and celery.
- In a small bowl, whisk together the mayonnaise and lime juice until smooth.
- Pour the dressing over the chicken mixture and toss to coat evenly.
- Season with salt and pepper to taste.
- Serve chilled, either on its own or over a bed of lettuce.
Notes
For the freshest taste, mix all ingredients except the mayonnaise ahead of time, and dress just before serving. Store any leftovers in an airtight container in the fridge for 3-4 days.
