  • 2 cups cooked chicken, diced Can use rotisserie chicken for convenience.
  • 1 cup pineapple chunks, fresh or canned For a fresher taste, use fresh pineapple.
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, diced
  • 1/4 cup mayonnaise Can be substituted with Greek yogurt.
  • 1 tablespoon lime juice
  • to taste salt and pepper
  • Lettuce leaves for serving (optional) Use for presentation.

Preparation
  1. In a large bowl, combine the diced chicken, pineapple chunks, red bell pepper, red onion, and celery.
  2. In a small bowl, whisk together the mayonnaise and lime juice until smooth.
  3. Pour the dressing over the chicken mixture and toss to coat evenly.
  4. Season with salt and pepper to taste.
  5. Serve chilled, either on its own or over a bed of lettuce.

Notes

For the freshest taste, mix all ingredients except the mayonnaise ahead of time, and dress just before serving. Store any leftovers in an airtight container in the fridge for 3-4 days.
