Ingredients
  

Main Ingredients
  • 2 slices slices of bread Use quality bread like sourdough for best flavor.
  • 2 slices slices of cheese Cheddar, mozzarella, or your favorite cheese work well.
  • 2 tablespoons pesto Generously spread for maximum flavor.
  • as needed Butter or olive oil For grilling the sandwich.

Method
 

Preparation
  1. Spread pesto on one side of each slice of bread.
  2. Place one slice of bread pesto-side up in a skillet over medium heat.
  3. Add the cheese on top of the bread in the skillet.
  4. Top with the second slice of bread, pesto-side down.
  5. Butter the outside of the sandwich.
Cooking
  1. Grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
  2. Remove from the skillet, slice, and enjoy!

Notes

Serve with a light salad or a bowl of tomato soup. For extra flavor, consider topping with more basil. To store, keep in the fridge for up to 2 days or freeze for up to 1 month.
