Preparation
- Spread pesto on one side of each slice of bread.
- Place one slice of bread pesto-side up in a skillet over medium heat.
- Add the cheese on top of the bread in the skillet.
- Top with the second slice of bread, pesto-side down.
- Butter the outside of the sandwich.
Cooking
- Grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
- Remove from the skillet, slice, and enjoy!
Notes
Serve with a light salad or a bowl of tomato soup. For extra flavor, consider topping with more basil. To store, keep in the fridge for up to 2 days or freeze for up to 1 month.
