- In a large bowl, combine the sliced peaches, raspberries, 1/2 cup of sugar, and cinnamon; set aside.
- In another bowl, mix the flour, remaining sugar, baking powder, and salt.
- Stir in the milk, melted butter, and vanilla extract until just combined.
- Pour the batter into a greased baking dish and spoon the fruit mixture over the top.
Baking
- Bake for 45-50 minutes or until the top is golden brown.
Serving
- Serve warm with a scoop of vanilla ice cream.
Notes
Don't rush the fruit prep—let the peaches sit with the sugar to enhance their flavor! For a sweeter cobbler, add more sugar to the fruit mix. You can also substitute blackberries or blueberries for raspberries. If storing, keep covered in the fridge for 3-4 days or freeze for up to 3 months.
